Barramundi (also known as Asian sea bass, sustainable sea bass or giant perch) is native to Australia and regions of Southeast Asia. The fish comes from both wild fisheries and aquaculture.  

Barramundi possesses a gentle, mild flavor with large, dense firm flakes and a few large bones that can be removed easily. Due to its moderate fat content, this fish has a minimal tendency to be overcooked.

Suggested cooking methods include: grilling, roasting, broiling or sautéing, baking or frying.

Recipe :

  1. To prepare the fish, make three score cuts all the way through the fillet of the fish, down to the bone, perpendicular on both sides of the fish. This will help the fish to cook faster and also ensure that more flavor gets down into the meat of the fish.

  2. Chop off the top halves of the lemongrass and discard, then bruise the bottom stalks of the lemongrass, and insert them into the cavity of the raw fish

  3. Steam the fish for 10-15 minutes, depending on the size of the fish. Monitor the fish so that it doesn't get overcooked.

  4. In a saucepan, bring the chicken stock to a quick boil, then toss in the palm sugar, and stir until dissolved. Turn off the heat, and then pour the broth into a mixing bowl.

  5. Coarsely chop 2 heads of garlic and as many or few chillies as you like.

  6. Go back over to the bowl of chicken stock and dissolved palm sugar, and add in the fish sauce, freshly squeezed lime juice, chopped cilantro, and then toss in the minced garlic and chilies, and mix around carefully.
