*INGREDIENTS:-

 THREADFIN FISH 马友鱼 (360g) 

- SUBMERGE IN TAP WATER 浸泡在水(30 MIN) 

GINGER 姜 (30g) 

JULIENNE GINGER 切丝 

FISH SCALED & GUTTED 鱼已祛鳞&内脏 

- PAT DRY 抹干 

CUT SLITS ON BOTH SIDES 鱼身斜划两刀 

SEASON WITH SALT 抹上少许盐

 *SAUCE:- 

SOY SAUCE 酱油 (4 TBSP) 

FEW DASH OF WHITE PEPPER 胡椒粉少许 

SUGAR 糖 (1 TSP) 

WATER 水 (2 TBSP) 

MIX WELL 拌匀 

*STEPS:- 

PREHEAT COOKING OIL 下油待热(150ml) 

FRY FISH OVER MEDIUM HEAT 中火煎鱼 

SLOWLY FRY FISH TILL GOLDEN BROWN 煎至金黄色

*REMEMBER TO GET A BIGGER WOK* 选稍大一点的锅 

TRANSFER FISH TO A PLATE 转放在碟上 

ADD COOKING OIL 加入油 (3 TBSP) 

ADD IN GINGER 加入姜 

FRY OVER MEDIUM LOW HEAT TILL GOLDEN BROWN & CRISPY 中小火煎至金黄色&酥脆 

REMOVE AND DRAIN 捞起备用 

PLACE GINGER ON FISH 铺上姜丝 

GINGER OIL 姜油 (1 TBSP) 

ADD SAUCE & STIR 下酱油搅匀 

DRIZZLE ON TOP OF FISH 酱汁淋在鱼上 

GARNISH WITH GREEN ONIONS 加入葱丝
