Lemon Butter Scallops

Scallops, when cooked right, have a golden brown sear against its white flesh. The perfect cook on scallops just requires four minutes and  have a delicate and rich taste when served immediately. These lemon butter scallops only require 5 minutes for the most amazing, buttery scallops. Simple and delicious, this is a dish that is sure to be a crowd favourite. 

 

Ingredients :

  • 1 tbsp unsalted butter 
  • 400g scallops 
  • Salt and freshly ground pepper (to taste) 

Lemon Butter Sauce :

  • 2 tbsp unsalted butter
  • 2 cloves garlic (minced) 
  • 1 lemon (juiced) 
  • Salt and freshly ground pepper (to taste) 
  • 2 tbsp fresh parsley leaves (chopped) 

 

Step by Step:

  1. Melt 1 tbsp butter in a large pan over medium high heat. 
  2. Rinse scallops with cold water and pat dry thoroughly. 
  3. Season scallops with salt and pepper generously. Add the scallops in a single layer, clockwise and cook, flipping once until golden brown and translucent in the center. It should take about 1-2 minutes per side. Set aside and keep warm.

Making the sauce :

  1. Melt 2 tbsp butter in the pan and add garlic and cook, stir frequently until fragrant for about one minute.
  2. Stir in the lemon juice, add salt and pepper to taste. 
  3. Serve scallops immediately with lemon butter sauce, garnished with parsley.
