Fried Threadfin Fish With Ginger 香煎姜丝马友鱼

Threadfin is one of the most popular wild caught fish you can see in the market. It is known as 'Ikan Kurau', in hokkien ‘Ngor Her’ or some even name it as Fourfinger Threadfin. Threadfins have firm, pinkish flesh and the texture on the meat are very juicy and tender.

This Fried Threadfin Fish with crispy ginger is a simple dish which can be found on a lot of home dinner tables. This dish is delicious and easy to prepare!

Ingredients:-

  • THREADFIN FISH 马友鱼 (360g) - SUBMERGE IN TAP WATER 浸泡在水(30 MIN)
  • GINGER 姜 (30g) JULIENNE GINGER 切丝
  • FISH SCALED & GUTTED 鱼已祛鳞&内脏 –
  • PAT DRY 抹干
  • CUT SLITS ON BOTH SIDES 鱼身斜划两刀
  • SEASON WITH SALT 抹上少许盐
  • *SAUCE:-
  • SOY SAUCE 酱油 (4 TBSP)
  • FEW DASH OF WHITE PEPPER 胡椒粉少许
  • SUGAR 糖 (1 TSP)
  • WATER 水 (2 TBSP)
  • MIX WELL 拌匀

 

*How To Cook:-

  1. PREHEAT COOKING OIL 下油待热(150ml)
  2. FRY FISH OVER MEDIUM HEAT 中火煎鱼
  3. SLOWLY FRY FISH TILL GOLDEN BROWN 煎至金黄色
  4. *REMEMBER TO GET A BIGGER WOK* 选稍大一点的锅
  5. TRANSFER FISH TO A PLATE 转放在碟上
  6. ADD COOKING OIL 加入油 (3 TBSP)
  7. ADD IN GINGER 加入姜
  8. FRY OVER MEDIUM LOW HEAT TILL GOLDEN BROWN & CRISPY 中小火煎至金黄色&酥脆
  9. REMOVE AND DRAIN 捞起备用
  10. PLACE GINGER ON FISH 铺上姜丝
  11. GINGER OIL 姜油 (1 TBSP)
  12. ADD SAUCE & STIR 下酱油搅匀
  13. DRIZZLE ON TOP OF FISH 酱汁淋在鱼上
  14. GARNISH WITH GREEN ONIONS 加入葱丝
