Claypot Spicy Grunter Fish 瓦煲香辣白皂鱼 - A dish with deep fried grunter fish, infused with dried chili sauce and sprinkle some SiChuan peppercorn! It gives you a numbing sensation! Serve hot with rice!!!

*RECIPE:-

  • GRUNTER FISH(920g)
  • SUBMERGE IN TAP WATER (30 MIN)
  • SICHUAN PEPPERCORN (1 TBSP)
  • TOAST OVER MEDIUM LOW HEAT (SHAKE OCCASIONALLY ~ 10 MIN)
  • LET COOL THEN BLEND

 

*PREPARE SAUCE :

  • DARK SOY SAUCE (1 TSP)
  • OYSTER SAUCE (1 TBSP)
  • SOY SAUCE (1 TBSP)
  • BLACK VINEGAR (1 TBSP)
  • SUGAR (1 TBSP)
  • WATER (60ml)
  • MIX WELL

 

  • CORNSTARCH SLURRY
  • CORN FLOUR (1 TBSP)
  • WATER (3 TBSP)
  • MIX WELL

 

  • GINGER (4 SLICES)
  • SPRING ONION (2 STALKS)
  • DRIED CHILIES (5 PCS SOAKED & CUT INTO PIECES)
  • GARLIC (3 CLOVES)

 

  • FISH CUT INTO PIECES
  • MARINATE WITH WHITE PEPPER (1 TSP)
  • SALT (1 TSP)
  • COAT WITH CORN FLOUR
  • HEAT OIL (MEDIUM HIGH HEAT)
  • DEEP FRY FISH UNTIL GOLDEN BROWN
  • REMOVE AND DRAIN

 

  • HEAT OIL IN CLAYPOT (2 TBSP)
  • ADD GINGER FRY UNTIL FRAGRANT
  • ADD IN GARLIC
  • WHITE PORTION OF SPRING ONION
  • DRIED CHILIES
  • ADD IN FISH AND SAUCE
  • THICKEN GRAVY WITH CORNSTARCH
  • ADD IN SPRING ONION
  • SPRINKLE SICHUAN PEPPER
