- SUBMERGE IN TAP WATER (30 MIN)
- SICHUAN PEPPERCORN (1 TBSP)
- TOAST OVER MEDIUM LOW HEAT (SHAKE OCCASIONALLY ~ 10 MIN)
- LET COOL THEN BLEND
*PREPARE SAUCE :
- DARK SOY SAUCE (1 TSP)
- OYSTER SAUCE (1 TBSP)
- SOY SAUCE (1 TBSP)
- BLACK VINEGAR (1 TBSP)
- SUGAR (1 TBSP)
- WATER (60ml)
- MIX WELL
- CORNSTARCH SLURRY
- CORN FLOUR (1 TBSP)
- WATER (3 TBSP)
- MIX WELL
- GINGER (4 SLICES)
- SPRING ONION (2 STALKS)
- DRIED CHILIES (5 PCS SOAKED & CUT INTO PIECES)
- GARLIC (3 CLOVES)
- FISH CUT INTO PIECES
- MARINATE WITH WHITE PEPPER (1 TSP)
- SALT (1 TSP)
- COAT WITH CORN FLOUR
- HEAT OIL (MEDIUM HIGH HEAT)
- DEEP FRY FISH UNTIL GOLDEN BROWN
- REMOVE AND DRAIN
- HEAT OIL IN CLAYPOT (2 TBSP)
- ADD GINGER FRY UNTIL FRAGRANT
- ADD IN GARLIC
- WHITE PORTION OF SPRING ONION
- DRIED CHILIES
- ADD IN FISH AND SAUCE
- THICKEN GRAVY WITH CORNSTARCH
- ADD IN SPRING ONION
- SPRINKLE SICHUAN PEPPER
