Asam Mackerel with Pineapple 亚参黄梨马胶鱼

If you are not sure what type of fish to eat , you know you won’t go wrong with Spanish Mackerel. It is commonly known as the most preferred choice of fish among Malaysians. Mackerel is an excellent source of dietary protein and it contains very high nutrition such as magnesium, potassium, zinc, vitamin B12 and full of omega-3 fatty acids.

PREPARE SAUCE 准备酱料

  • TOAST BELACAN 峇拉煎烤香 (10g)
  • GALANGAL 南姜 (50g)
  • TURMERIC 黄姜 (10g)
  • SHALLOTS 红葱头 (6 pcs)
  • LEMONGRASS 香茅 (2 STALKS)
  • TORCH GINGER BUD 姜花 (1 STALK)
  • RED CHILIES 红辣椒 (100g)
  • BIRD'S EYE CHILIES 指天椒 (2 PCS)
  • WATER 水 (80ml)
  • COMBINE ALL INGREDIENTS IN BLENDER 全部材料放入搅拌机
  • BLEND UNTILL SMOOTH PASTE 搅至细滑

 

PREPARE SAUCE 准备酱料

  • ASAM JAWA PASTE 亚参膏 (1 TBSP)
  • DILUTE WITH WATER 加水搅匀 (50ml)
  • LADY'S FINGERS 羊角豆 (5 PCS)
  • TOMATO 番茄 (1 PC)
  • LAKSA LEAVES 叻沙叶 (3 STALKS)
  • PINEAPPLE JUICE 黄梨汁 (250ml)
  • SLICED PINEAPPLE 黄梨切片 (150g)

 

*How To Cook The Fish:-

  1. SPOTTED SPANISH MACKEREL马胶鱼 (480~500g)
  2. SUBMERGE IN TAP WATER 浸泡在水 (25 MIN)
  3. FISH ALREADY GUTTED & DESCALE 鱼已去鳞&内脏
  4. TRIM FINS & CUT INTO 1.5CM THICK 剪去鱼鳍,切1.5公分厚片
  5. MARINATE WITH PEPPER & SALT 胡椒粉&盐腌制 (20 MIN)
  6. COAT WITH CORN FLOUR 沾上蜀粉
  7. HEAT OIL 烧热油 (100ml)
  8. FRY MACKEREL OVER MEDIUM HEAT 中火煎鱼
  9. FRY TILL BOTH SIDES GOLDEN BROWN 煎至两面金黄色
  10. REMOVE & SET ASIDE 沥干备用

 

*How To Cook The Dish:-

  1. HEAT OIL 烧热油 (5 TBSP)
  2. ADD IN THE BLENDED INGREDIENTS 加入酱料
  3. COOK TILL OIL BREAKS OVER MEDIUM HEAT 中火炒至出油 (~15 MIN)
  4. ADD IN PINEAPPLE JUICE加入黄梨汁
  5. ASAM JAWA JUICE亚参水
  6. LAKSA LEAVES 叻沙叶
  7. SALT 盐(1 TSP)
  8. SUGAR 糖 (2 TBSP)
  9. SIMMER 小火煮 (15 MIN)
  10. ADD IN PINEAPPLE 放入黄梨
  11. TOMATOES & LADY'S FINGERS 番茄 & 羊角豆
  12. COOK OVER MEDIUM HEAT 中火煮(5 MIN)
  13. ADD IN SOY SAUCE TO TASTE 加入酱油调味 (2 TBSP)
  14. ADD IN FISH 加入鱼
  15. WATER 水 (100ml)
  16. COVER AND COOK 盖上锅盖再焖煮(10 MIN)
  17. THE DISH IS READY TO SERVE
